Winemaking
Crafted from Semillon grown high in the hills above Whitfield in Victoria's North East and left on the vine to fully develop the intense and concentrated characters of the noble rot. The grapes were harvested on 21st May when the bunches achieved a perfect balance between botrytis characters, fresh fruit and acidity. With a loss of more than 50% of the fresh weight lost through concentration, the result is the most luscious juice imaginable, which is what refines this botrytis style.
Colour: Straw
Nose: Aromas of candied apricots and citrus peel blended with the sweet characters of fresh Semillon.
Palate: Luscious layers of apricot and mango on the palate balanced by soft juicy pear acidity.
Wine Analysis: Alc/Vol 10%
Peak Drinking: Will impress while youthful or will reward careful aging.
Food Matches: Enjoy with fresh fruit and cheeses, a delicious accompaniment to duck liver pate or perfect with rich luxurious desserts.

In France this style of wine is called Sauternes, while in Germany it is called Beerenauslese or Trockenbeerenauslese. These wines are amongst the most expensive and most sought after wines in the world.
